Wine of the Week - Wallington Bald Hill GSM

From down the hill at Canowindra, Wallington Wines are a certified biodynamic and organic winery. The ‘GSM is a classic blend of Grenache, Shiraz and Mourvedre varieties.

Savoury spice and earthy notes. Sweet red cherry and blackberry flavours and undertones of chocolate and spice.

The grapes were hand picked then allowed to naturally ferment in open vats with hand plunging. After basket pressing the wine was matured in a variety of French and American oak barrels for 16 months before blending and bottling.

Enjoy with a lamb dish. Drink now or will reward careful cellaring for up to 5 years.
