CJay’s Oreo Mug Cake

The other day I went to cook at a customer's house and, cleaning the kitchen up at the end of the family meal, I saw their young kid, aged 13, start making a dessert in a mug. I won't use his surname for privacy, but his parents allowed me to use his name: CJay.

The story goes like this:

"Would you like to try my Oreo Mug Cake?" CJay asked me while stirring all the ingredients vigorously in a mug.

"Oh thank you very much, you are very kind, but you don't have to do that," I replied.

"Of course I do!” CJay said. “You cooked dinner for us, so this is what I can do for you!"

I was absolutely stoked, obviously. 

Not only did I try his delicious microwave Oreo Mug Cake in the microwave, but I felt so privileged to meet this 13-year-old kid with such amazing manners and empathy I decided it was something worth celebrating and showcasing publicly!

So this is it CJay , thank you very much for showing me that there's hope for the future generations of this country. Please never stop being humble my friend! 

So as I promised him, here is the recipe for the famous CJay’s mug cake —

you are going to love it! This is a great activity for you and the kids to do together this school holidays. 

Ingredients:

4 Oreos mushed (+1 whole one)

1/4 cup milk

1 tbsp sugar

1 tbsp flour

1/4 tsp baking powder

1 tsp cocoa powder

Method:

1. In a mug mix together the 4 Oreos, and the rest of the ingredients — milk, sugar, flour, baking powder and cocoa powder — until well combined ('smash it all together’, was how CJay put it)

2. Add the last whole Oreo in the centre, dunk it and cover completely.

3. Microwave for 1 minute or so.

4. Put it out of the microwave (be aware it is hot). 

5. For extra love, add a scoop of your desired ice cream. I served mine with a little bit of mandarin sorbet from Spilt Milk. Delicious!
