The quest to make a perfect wine is never ending … because it’s almost impossible to do, though every now and then you get close.

Born in a cool year in the chilly highlands of Orange, this superb blend of chardonnay and pinot noir sets a new standard for sparkling wines in New South Wales. The journey has been a long one, commencing in 2015 when the grapes for this labour of love were hand-picked and hand-sorted in the vineyard.  The wine was made using méthode traditionnelle, the time-honoured technique for making the finest sparkling wines. Once the second fermentation in the bottle was complete the wine rested on its yeast for years, maturing and softening, slowly taking on the bready-yeasty characters that make fine sparkling wine so special. Patience must be a virtue – you just can’t hurry this process.

Now this lovely sparkling wine is ready for your enjoyment – the perfect aperitif or the ideal wine to go with some fresh oysters this summer.
